Caramel Apple Upside Down Honey Cake

Good morning! I hope you had a fantastic Labor Day weekend and are now getting back into the swing of things! I spent the weekend with my family in New Hampshire and man was it beautiful.  I love that both mine and Mike’s family are close enough to go away as one big family together. I feel lucky for sure. Jax also LOVES New Hampshire. Swimming in the lake, massive sticks everywhere. The pup was in heaven!

Now, let’s get to today’s recipe. Rosh Hashanah is right around the corner, and this spin on a honey cake is just perfection. Whether you celebrate or not, this is the ultimate Fall cake all season long!

This cake is fluffy, moist, flavorful, and loaded with your favorite Fall flavors.

Caramel Apple Upside Down Honey Cake

Preparation 10 min 2017-08-20T00:10:00+00:00 Cook Time 30 min 2017-08-20T00:30:00+00:00 Serves 8     adjust servings

Ingredients

Wet Ingredients

  • 5 organic eggs
  • 1/2 cup + 2 tablespoons unsweetened applesauce
  • 1/3 cup + 2 teaspoons raw honey
  • 1 teaspoon vanilla

Apple Bottom

Optional

Instructions

  • Preheat oven to 350
  • Grease 8 inch round pan
  • Slice apples and lay them in the bottom of the baking pan
  • Heat caramel   if it isn't already hot and pour evenly over apples
  • In a large bowl combine dry ingredients (sift if flour has clumps)
  • Add in wet ingredients and whisk together
  • Pour cake batter into cake pan on top of the apple mixture
  • Bake for about 30 minutes, or until a toothpick comes out clean
  • Once cooled completely, carefully flip the cake pan upside down onto a serving dish
