This Bananas Foster Chia Seed Pudding is the perfect make-ahead chia pudding recipe. It is a delicious egg-free breakfast option that everybody will love, and the bananas foster topping is one of my all-time favorites!
Chia Pudding Recipe
Life sometimes gets busy, and though we may be busy, we can still make some delicious nutrient-packed snacks and breakfasts that have a fun twist to them. I love all things bananas foster and love chia seed pudding. My daughter also loves this banana chia pudding so it’s great. I’ll make it a few days ahead, then make the topping the day of!
Ingredients Needed:
For the Chia Pudding:
- Black or white chia seeds
- Milk of choice
- Maple syrup, more to taste
For the Bananas Foster:
- Bananas
- Butter
- Coconut sugar
- Vanilla extract
- Optional: Dark rum
- Optional: Chopped walnuts
How to Make Chia Pudding
It’s as simple as throw it in a jar and leave it in the refrigerator overnight. Then boom! It’s ready to devour.
Step 1: Stir together your chia seeds and ingredients in a container, jar, or bowl.
Step 2: Let it sit! Mix together your ingredients, and give it a few minutes and mix it again to break up any clumps! Place the container in the fridge overnight, or at minimum 3-4 hours.
Note: It should be thick when ready to eat. It should not have liquid remaining. If it’s not thick yet, add a teaspoon or two of more chia seeds, and place back in the fridge to thicken!
What Milk Should I Use?
This chia pudding works with any milk! I love using coconut milk, almond milk, or oat milk, but any milk will work great!

Chia seeds are packed with tons of insoluble fiber, omegas, nutrients, and potassium! They are quiet nutrient dense, plus the addition of the delicious flavors of decadent bananas foster make this a healthy but crave-worthy breakfast, snack, or treat.
What is Bananas Foster?
Traditionally, bananas foster is a dessert. The sauce made from butter, brown sugar, cinnamon, dark rum, and bananas The banana/sauce combination are then served typically over the ice cream. In this recipe, we made the bananas foster recipe a bit cleaner, and made it not only perfect for dessert, but breakfast or a snack, too!
Meal Prepping This Chia Seed Pudding
Chia pudding can be stored in the refrigerator for up to 5 days, so it’s a great and easy on-the-go breakfast or snack. As for the bananas foster topping, make this the day of! And top it with your fresh or meal prepped chia seed pudding.

Bananas Foster Chia Pudding [Video]
Ingredients
- 1/4 cup chia seeds
- 1 cup milk of choice
- 2 teaspoons maple syrup more to taste (see note)
Bananas Foster Topping:
- 2 large bananas
- 1/4 cup butter
- 1/4 cup coconut sugar
- 1 teaspoon vanilla extract
- Optional: 2 tablespoons dark rum
- Optional: 1/4 cup chopped walnuts
Instructions
- In a container or jar, place chia seeds, coconut milk (or milk of choice), and sweetener. Mix until combined. Let sit for about 5 minutes, and then mix again to remove any clumps.
- Place your jar or container into refrigerator for at minimum 3 hours, or better yet, overnight.
- Once ready to assemble, remove chia pudding from the refrigerator and taste. Adjust sweetener as desired
- Bananas Foster Topping: In a skillet heat butter until melted. Add in sugar and whisk until combined. Add in vanilla and sliced bananas. Let cook for 2-4 minutes, mixing gently occasionally. Add in optional rum and walnuts. Let cook for an additional 3-4 minutes. Remove and let cool for 5 minutes
- Layer bananas foster topping on top of your chia seed pudding, in a bowl, mug, or cup!
- Store the chia seed pudding n the refrigerator for up to 5 days, separate from the topping. Top with the bananas foster topping when ready to eat.

This was soooo good!
This was absolutely incredible! I reduced the sugar in the bananas a bit and my entire family (including two little kids) all loved it. Topped it with some cocoa nibs (why not?) and it was so yummy. Will make this one again for sure 🙂
Do the coconut milk and sugar make it taste super coconut-like? I hate coconut unfortunately so if so, any replacement suggestions?
Could you use Monk sugar or stevia in place of the coconut sugar? If so, about how much? This looks so yummy
This was absolutely delicious! I usually hate chia pudding, but desperately want to like it because of the health benefits. It must have been the ratio you used because the texture is wonderful! The topping of course, is out of this world!

I love raw cacao/nut buttet chia pudding. I make it with fresh homemade cashew milk and I put it in my vita mix. Overnight it comes out like a chocolate mousse, absolutely delicious

Is butter considered dairy free?
Hi Lorry,
For vegan, sub favorite butter alternative. For more dairy-free, Ghee is a good substitution if you cannot fully handle dairy. It is clarified butter with hardly any dairy left in it.
I’m guessing coconut oil would work and depending on the brand you buy, may add a faint coconut flavor. Sounds good to me!! 🙂
It is the milk protein in butter that is anti-paleo. You can get rid of that by making ghee. What it is is clarified butter. Easy peasy to make.Here is a tutorial.
