In a medium pot over heat oil and garlic over medium-high heat.
Add in onions, peppers, carrots, and celery, and sauté until onions turns translucent and carrots begin to soften, about 2-3 minutes.
Add turkey and cook until no pink remains and it is fully cooked through.
Add tomato sauce, diced tomatoes, tomato paste, black beans, kidney beans, spices and water.
Bring to boil over medium-high heat. Turn hear down and let simmer uncovered until sauce is thick, about 30 minutes. Taste. If it needs more flavor, let simmer for up to 1 hour. The longer this soup simmers, the more flavorful it will be!
