Healthy Food Friday: Coconut {Coconut Shrimp with Orange Chia Marmalade}

Today’s Healthy Food Friday feature with American Express is a definitely a favorite of mine. It’s all about COCONUT, and it’s perfect to keep up with this month’s theme inspired by travel. Coconut may remind you of a tropical vacation, a favorite ethnic dish, or a delicious dessert treat. They are a great example of a healthy fat (don’t be afraid of fat, you guys), which is why I am super excited to share it today! No, it’s not a low-calorie snack, but the health benefits out weigh that any day, in my opinion! 


Today you get two recipes in one… Coconut shrimp, that makes for the perfect appetizer, AND an orange chia marmalade which can be used as a jam for other savory things, too! Super delicious, and compliment each other perfectly. I’ll be serving these at my next summer get together, for sure.

Coconut Shrimp with Orange Chia Marmalade

Coconut Shrimp
  1. 15 Jumbo shrimps
  2. 2 tbsp coconut flour
  3. 1/2 cup shredded coconut
  4. 1 egg
  5. 1 tbsp coconut sugar
  6. 1/4 tsp Himalayan sea salt
  7. 1/2 cup coconut oil, for frying (can omit if baking)
Chia Marmalade
  1. 2 oranges, peeled and sliced
  2. 2 tbsp honey
  3. 1/2 Lemon juiced
  4. 1 tbsp chia seeds
  5. Optional: 1/2 tsp red pepper flakes (add for a nice kick), more to taste
  1. 1. In a small pot bring marmalade ingredients (except of chia seeds)to medium heat mix well and mash to combine, add in chia seeds and mix together (this step takes about 5-7 minutes)
  2. 2. Transfer to your blender; blend somewhat smooth
  3. 2. Let set in the the refrigerator until serving; store in air-tight container in fridge for up to two weeks
Coconut Shrimp
  1. 1. In a small bowl combine 2 tbsp coconut flour with a dash of salt and pepper
  2. 2. In a separate small bowl crack an egg and whisk it together
  3. 3. In a third bowl combine remaining coconut flour, shredded coconut, salt, and coconut sugar
  4. 4. Dip cleaned and dried shrimp into plain coconut flour mix
  5. 5. Dip in egg mixture
  6. 6. Dredge in coconut mixture, press down to coat
  1. 7. Heat 1/2 cup coconut oil and working in batches, fry shrimp for about 3-5 minutes
  2. OR
  3. 8. Preheat oven to 400, line baking sheet and grease- bake for 10 minutes on each side
