This Pesto Potato Egg Bake is one of my favorite ways to use up leftover roasted potatoes. It’s a tasty, one-pan meal made with crispy roasted potato, homemade spinach basil pesto, and gently fried eggs.



Easy Breakfast Egg Bake Recipe

Take my Air Fryer Roasted Potatoes or your favorite Roasted Potato recipe, and turn the leftovers you have in the fridge into my favorite breakfast!

Undoubtedly when I have leftover potatoes in my fridge, you know we are all eating this for breakfast, or even a great easy lunch or dinner! It spruces up those roasted potatoes, with added protein for a jam-packed balanced plate of healthy fats, protein, and carbs!

Ingredients Needed

  • Oil: Avocado oil or olive oil are my favorite options.
  • Roasted Potatoes: I like to use leftover potatoes from my air fryer roasted potatoes recipe. If you have another roasted potatoes recipe you love, feel free to use that instead.
  • Pesto: My favorite to use is my spinach basil pesto recipe.
  • Eggs: You’ll need 4 large eggs for this recipe.
  • Salt and Pepper: For a little bit extra flavor and spice. If you want a little bit of heat, try adding some cayenne pepper or red pepper flakes.

Can I Make Pesto Without Pine Nuts?

Absolutely! While classic pesto is made using pine nuts, it can easily be made using other nuts such as walnuts, pistachios, almonds, pecans, etc.

You can also leave the nuts out entirely or add a nut-free “nuttiness” with sunflower seeds.

How to Make a Breakfast Egg Bake

Since this egg bake recipe uses leftover potatoes and pesto, it comes together in just a few short minutes!

  • Heat pesto and potatoes: In a skillet, heat oil over medium heat, then add in the roasted potatoes and pesto. Mix to combine.
  • Egg eggs and seasonings: Crack the eggs into the skillet and sprinkle with salt and pepper.
  • Cover and cook: Cover the skillet, lower the heat, then cook until set.

Can I Use Pesto Sauce From a Jar?

Absolutely! I love homemade pesto, but this recipe works great with jarred pesto too. Grab your favorite one and get cooking!

How Long Does an Egg Bake Last?

Leftover pesto potato egg bake can be stored in an airtight container in the fridge for 3-4 days.

To reheat, simply warm back in a skillet covered with a lid until heated through.

Pesto Potato Egg Bake

Ingredients
  

  • 1 teaspoon avocado oil or olive oil
  • 2 cups roasted potatoes
  • 2-4 tablespoons pesto
  • 4 eggs
  • pinch of salt
  • pinch of black pepper

Instructions

  • Heat oil in a skillet over medium heat until hot.
  • Add roasted potatoes. Add pesto and mix to combine. Add more as desired.
  • Crack in eggs and sprinkle with salt and pepper.
  • Cover your skillet with a lid, lower the heat to medium-low, and cook until the egg whites have set and are opaque (about 3-5 minutes).
