January was all about kick-starting that clean eating for the year with Whole30’s, 21DSD’s, and so on and let me start by saying let’s KEEP IT UP! If you’ve done it or are doing it, there’s no reason to ditch the goals now! Think S-U-M-M-E-R and push yourself to be accountable! With that said… don’t forget to treat yourself once and a while. By treat yourself I mean Valentine’s Day, clearly, and with some guilt-free chocolatey deliciousness. You with me?

And now… for my Raspberry Swirl Brownies.

These fudgy paleo brownies are packed with warm chocolate chunks and topped with fresh raspberries and creamy raspberry swirls. The perfect festive treat for your Valentine, guilt-free!

Raspberry Swirl Brownies

    Dry Ingredients

    Wet Ingredients

    • 1 egg
    • 2 tbsp almond butter
    • 3 tbsp raw honey
    • 1 tsp vanilla
    • 1/3 cup almond milk

    Creamy Raspberry Swirl

    • 1/3 cup cashew cream*
    • 1/2 cup raspberries
    • Additional 1/2 cup raspberries


  • Preheat oven to 350
  • Line a baking dish (8x8) with parchment paper or grease your baking dish
  • In a mixing bowl sift together dry ingredients, except for the chocolate chips
  • Add in wet ingredients and mix until combined
  • Add in chocolate chips
  • Pour into baking dish and set aside
  • In your high-speed blender add 1/2 cup raspberries to your existing cashew cream* and blend until smooth
  • Place a few dollops into your brownie batter and swirl with a fork or a tooth pick
  • In a small bowl, smash the remaining raspberries with a fork until blended together
  • Swirl the smashed raspberry mixture into the brownies as well
  • Bake for 25-30 minutes or until a toothpick comes out clean
  • Recipe Notes

  • *Cashew Cream: Soak 2 cups of cashews in water (water filled just to the top of the cashews) for 3-4 hours - overnight, the longer the better. Once soaked, remove from water, place in a high-speed blender with 1 tbsp fresh water and blend until smooth and creamy.
