Naturally Sweetened Mint Mojito

This Mojito recipe is naturally sweetened using a honey mint simple syrup. It’s refreshing and the ultimate summer cocktail!

As if a Mojito wasn’t delicious enough, we’ve added in a little extra kick of mint and sweeten this one with a Honey Mint Simple Syrup. With mint in abundance in the later summer months, it’s the perfect refreshing cocktail to make right now! Serve it to a crowd or enjoy during a casual dinner at home. Either way, it’s going to be loved!

Traditionally Mojitos are made with granulated sugar to sweeten them. The granulated sugar is muddled with the mint to break it down so it doesn’t taste grainy, and to help release the natural oils on the mint. Here, we skip the refined sugar and instead make a quick Honey Mint Simple Syrup that not only adds just the right touch of sweetness to the mojito, but also makes it extra minty. You can skip this step if you’d like, and just make honey simple syrup instead, but that extra hint of mint really makes this summer cocktail special. We recommend making the simple syrup if you’d like to sweeten this naturally, as adding straight honey doesn’t blend well with the cold beverage.

  • Fresh Mint
  • Lime Juice
  • White Rum
  • Ice
  • Club Soda

How to Make Simple Syrup with Mint

Check out this post for all the instructions and recipe, but here is a quick recap:

  1. First you make a simple syrup by combining 1 part water to 1 part sweetener. In this case, we use honey. Bring it up to a boil and that is a your base simple syrup.
  2. Next you bruise or rough up the clean mint to help release the oil. Then place the cleaned mint leaves in a heat proof bowl. Carefully pour the simple syrup over the mint. Let it infuse for 10 minutes.
  3. Carefully strain the mint leaves, pressing down gently to get all of the oils out of the leaves.
  4. Use in this Mojito and many others!

We recommend making Mojito’s to order. If you are serving your crowd prep all the ingredients you need and have that ready to go. You can up up to 3 at once if you follow all of these steps and make the drink in a cocktail shaker, and then pour over ice in each individual glass!

  1. Muddle the mint! Place the mint leaves in the glass and muddle to release the oils that give it a nice refreshing, minty flavor. Muddle just enough to slightly bruise the mint. 
  2. Fill the glass ⅔ full with cracked ice. 
  3. Pour in the lime juice, the rum and top it off with club soda.
  4. Garnish with extra lime or mint.

Honey Mint Mojito

Prep Time 00:05 Total Time 00:05 Serves 2

Ingredients

  • Small handful of fresh mint, washed well
  • 2 tablespoons lime juice
  • 2 teaspoons Mint Simple Syrup
  • 2 ounces white rum
  • Club Soda
  • Extra lime and mint for garnish

Directions

  1. Place 5-8 mint leaves in two highball glasses. Place the mint and the simple syrup in the glass. Using a muddler, or the bottom of a wooden spoon, muddle the mint to help release the oils.
  2. Fill the glass ⅔ full with cracked ice. 
  3. Pour in the lime juice, the rum and top it off with club soda.
  4. Garnish with extra lime or mint.

Aperol Spritz

Meet my favorite drink of summer: the Aperol Spritz. This classic Italian cocktail was one that we grew to love in Italy and we brought this aperol spritz recipe right home with us when we returned! It’s light, refreshing, and packed with perfect citrus flavor. This is an easy cocktail to throw together that everyone will enjoy!

Super Easy Aperol Spritz Recipe

When we were in Italy, we discovered the Aperol Spritz. I know, it’s not new, but it was to us at the time, and it has since become our staple cocktail. It’s light, refreshing, and the best non-recipe recipe you can make! In Italy, an Aperol Spritz is an “apertivo” — which is essentially a 2 hour post-work cocktail hour with light dishes. One dinner we continued to ordered them, instead of switching to wine, and let’s just say we got many looks, haha.

First… What is Aperol?

Aperol is an orange flavored Italian Apertif with a mix of sweetness, bitterness & spices. It’s similar to Campari but slightly different as it’s less bitter and half the alcohol content. In addition, it’s also inexpensive which makes it a great cocktail to serve a large group!

An Aperol Spritz is made with:

  • Aperol
  • Chilled Prosecco
  • Soda Water or Tonic Water
  • Fresh Orange Slices, for garnish
  • Ice

Generally, an Aperol Spritz is a 3-2-1 mix of three parts prosecco, two parts Aperol, and one splash of soda water. However I prefer making it with a slight change: I ditch the soda water! First, fill up your glass with prosecco. Then add a splash of Aperol. Finally,  garnish with an orange slice and enjoy! It’s that easy! I love serving guests Aperol Spritz’, because it’s hands off and makes my time hosting less stressful!

  1. Place all ingredients in a high-speed blender.
  2. Blend on high until well combined. You should not be able to see any pinneaple pieces.
  3. Taste and adjust ice as needed. The consistency should be very thick but smooth enough to drink!

Rosé, a little honey, frozen strawberries, and lemon makes this summertime cocktail perfection.  I’ve known about the frose trend for some time now but hadn’t tried it until recently, and I am officially hooked!

Earlier this month I was in the Hampton’s for an amazing retreat that I hosted with Liz from The Lemon Bowl and Gina from Skinnytaste. We had such a blast — which you’ll read more about very soon! We visited Bedell Cellars in North Fork, Long Island for a wine tasting on a beautiful sunny Saturday afternoon, and ended our time there with a refreshing glass of frosé. It was the perfect summer slushie that I knew I had to recreate it for you guys!

So, what is Frosè?

Frose is simply frozen rose! It’s rose wine blended with some frozen strawberries and ice, with just a touch of honey. Most frose recipes tend to be on the too sweet side, but my recipe is sweetened just right using only unrefined sweeteners. It’s basically a blend between a summery frozen cocktail and a glass of wine.

What kind of rose should I choose?

Choose a rose that is full-bodied as the flavor gets somewhat diluted once it is blended. Make sure that it’s a rose that you’d want to drink on it’s own for the best flavor frose.

Here is what you need to make this frose recipe:

  • Rose wine
  • Ice
  • Frozen strawberries
  • Lemon
  • Honey

How to Make Frozen Rose:

  1. Place rose wine, ice, frozen strawberries, lemon, and 2 tablespoons honey or simple syrup in a blender. Blend until well combined. If you made simple syrup, place the extra sweetener in your fridge for later use.
  2. Taste and add more sweetener before serving depending on how sweet you want it! If it isn’t thick enough, add more ice or frozen berries as needed.

  • 1/2 bottle rose
  • 2 cups ice, more as needed
  • 2 cups frozen strawberries
  • 1 lemon, juiced
  • 1/4 cup honey, or simple syrup of choice

Directions

  1. Place rose, ice, frozen strawberries, lemon, and 2 tablespoons honey or simple syrup in a blender. Blend until well combined. If you made simple syrup, place the extra sweetener in your fridge for later use.
  2. Taste and add more sweetener before serving depending on how sweet you want it! If it isn't thick enough, add more ice or frozen berries as needed.

Recipe Notes

  1. If your frosè isn't thick enough, pour into a baking dish, cover, and place in your freezer for at least 30 minutes, or until ready to serve.
  2. Basic Simple Syrup Recipe:
    1. Place 1/4 cup sugar of choice and 1/4 cup water in a small saucepan.
    2. Cook on low heat until sugar has dissolved.
    3. Set aside to cool and place in the fridge until ready to use.

Ingredients

  2. 2 freshly squeezed grapefruits (makes 1 3/4 cups of juice)
  3. 1 cup sparkling water
  4. 2 bottles of champagne or prosecco
  5. 6 to 8 ounces Stoli gluten-free vodka
  6. 3/4 cup of simple syrup, add more based on desired sweetness
  7. 2 cups of ice
  8. Garnish: 4 lemon slices, 4 orange slices, 2 grapefruit slices, and 1/2 cup fresh cranberries or pomegranate seeds
  9. Garnish: Sprigs of rosemary
Simple Syrup (makes: 1 1/4 cup)
  1. 1/2 cup honey
  2. 1 cup water
  3. 1 tablespoon fresh ginger, peeled and cut into slices
Instructions
  1. Make simple syrup: Bring water honey, and ginger to a simmer, let simmer for 5 minutes. Take off heat and set aside Let cool completely before using. Store in the fridge for up to 1 month.
  2. Juice oranges and grapefruit and set aside. Cut additional orange, grapefruit, and lemon slices for garnish in the pitcher.
Assemble
  1. Place freshly squeezed juice, and fruit slices in pitcher.
  2. Pour in sparkling water, hampagne or prosecco, vodka, cranberries, 3 sprigs of rosemary, and 2 cups of ice.
  3. Once simple syrup is cooled, pour in 3/4 of a cup. Reserve remaining simple syrup for later use.
  4. Stir well, garnish, and serve.

Ingredients

Vanilla Bean Pumpkin Syrup

Directions

  1. For the Vanilla Bean Pumpkin Syrup: (makes 1 cup)
  2. Bring to a low boil until reduces by half, about 10 minutes.
  3. Strain using a cheese cloth.
  4. Let cool.
  5. Sprinkle 1/2 cup of pepitas with 1 teaspoon cinnamon and 1 teaspoon of maple sugar.
  6. Roast for 5 minutes tossing halfway through and watching to avoid burning.
  7. Fill a shaker glass with ice.
  8. Add the syrup, vodka, and spices. Shake vigorously.
  9. Drench the rim of your glasses with lemon juice.
  10. Dip glass rim into a cinnamon sugar mixture.
  11. Pour in cocktail. Top with the sparking water. Garnish with pipitas.
