Roasted Eggplant Dip & Homemade Garlic and Herb Crackers

Homemade Garlic, Herb, and Sea Salt Crackers

Ingredients
  1. 1 cup almond flour
  2. 1/4 cup ground flax
  3. 1 tsp Italian seasoning
  4. 1/2 tsp garlic powder
  5. Himalayan sea salt, to taste
  6. 1 egg
  7. 2 tbsp grass-fed butter or oil of choice
  8. Optional: 1/2 tsp rosemary
  9. Optional: 2 tbsp sesame seeds
Instructions
  1. 1. Preheat oven to 300
  2. 2. In a mixing bowl combine all ingredients and mix well
  3. 3. Line a baking sheet with parchment paper or your slipmat
  4. 4. Place ball of dough in the center and cover with another piece of parchment paper
  5. 5. Roll out with rolling pin
  6. until very thin (1/8 in.)
  7. 6. Using a pizza cutter, cut squares of desired size
  8. 7. Bake for 15-20 minutes until crispy

Ingredients
  1. 1 eggplant
  2. 1/2 cup fresh tomatoes, chopped
  3. 1 onion, sliced
  4. 3 garlic cloves
  5. 1/2 tsp Himalayan sea salt
  6. 1/2 tsp freshly ground pepper
  7. 1 tbsp extra-virgin olive oil
  8. 1 tsp lemon juice
Instructions
  1. 1. Preheat oven to 400
  2. 2. Line a baking sheet with parchment paper or your slipmat
  3. 3. Cut eggplant, tomatoes, and onion
  4. 4. Place cut veggies and whole garlic cloves on baking sheet and drizzle with sea salt, pepper, and oil; roast for 40 minutes
  5. 5. Transfer vegetables into food processor and add lemon juice
  6. 6. Pulse until smooth
  7. 7. Let cool and serve with crackers and vegetables in a party platter
Notes
