Cauliflower Pizza Bites (Gluten-Free and Grain-Free)

Ingredients
  

Cauliflower crust:

Pizza Toppings:

  • 1/4 cup pizza sauce
  • 3/4 cup mozzarella cheese
  • 12 pieces pepperoni optional, or toppings of choice

Instructions

  • Preheat oven to 400°F.
  • In a food processor, or using a hand grater, pulse/grate cauliflower until rice consistency.
  • In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, garlic powder, salt, pepper and Italian seasoning.
  • Brush oil inside muffin tins and scoop 2 tablespoon cauliflower mix and press down to form crust.
  • Bake for 25 to 30 minutes until fully cooked and golden brown.
  • Top with about 1 teaspoon sauce, add 1 tablespoon cheese and pepperoni if desired.
  • Place back in oven for 5 minutes, or until cheese is melted.
  • Let sit for a few minutes then gently loosen the pizzas from the muffin tin and gently spoon out onto a plate. The longer they sit, the easier they will be to pop out.
  • Serve immediately and enjoy!

Notes

Note: Frozen pre-riced cauliflower is not riced fine enough for these!!
Cauliflower sizes vary. If yours is bigger or makes more riced cauliflower, and it seems like it needs a little extra love to make them firm, add an additional egg and tablespoon of flour. 3 cups of packed riced cauliflower is the correct consistency for these rolls.

    I have made cauliflower pizza crust before using the frozen riced cauliflower that really needed the liquid squeezed out. The video didn’t show this step so I am wondering if this isn’t necessary when using fresh? Thanks I am a cauliflower newb!!

    I made this last night, but doubled the recipe and made a full-sized pizza — it came out great! I spread the dough out on a parchment paper-lined baking sheet and baked at 400 for about 35-40 minutes before putting any toppings on. Will definitely make it again!

  3. These were great! We made one batch with marinara, ground beef and mushrooms and a second batch with vegan pesto, mushrooms, green pepper, and no cheese and they were also delicious!

  7. What’s a good substitute for the almond flour? I will need to substitute the eggs for flaxseed. They look really good!

  8. Made these pizzas and they were delicious! Not to mention so easy to make! Make sure to grease your muffin pan really well…I didnt, so they stuck a little, but I didnt mind! They were all gone after my 5 year old, husband and I ate them 🙂
