Easy Gluten Free Pancake Mix from Scratch

Looking for an easy gift that everyone will love? My famous Gluten Free Pancake Mix is always a hit! It stems from my Best Paleo Pancakes recipe and is an internet favorite.

This is a four-ingredient recipe that you can make into a single batch, double batch, or big batch. It’s so quick and simple and so much better than store-bought mix.

When you’re ready to make pancakes, just gather up a couple of eggs, vanilla, and unsweetened applesauce to make the batter.

This recipe is great for gifting to your friends, family, and neighbors for the holidays or just for having on hand to make breakfast easier! Just make a label that tells them what to add based on your quantities!

For the Pancake Mix

These pancakes/waffles are gluten-free, grain-free, and totally the real deal!

  • Flour: A combination of almond flour and tapioca flour is the perfect gluten free base for this homemade waffle mix.
  • Baking Powder: Baking powder is the key to light and fluffy pancakes.
  • Fine Sea Salt: Gives the pancakes just the right amount of flavor.
  • Additional Ingredients: Once you’re ready to make pancakes, you’ll just need eggs, vanilla extract, and unsweetened applesauce!

How to Make Pancake Mix

  1. Combine: In a large bowl or mason jar, mix almond flour, tapioca flour, baking powder, and sea salt.
  2. Store: Store at room temperature for 2 weeks or in the fridge for up to 1 month.

What is the Trick to Making Pancakes?

Ready to turn your pancake mix into pancakes? Here are a couple of my best tips:

  • Don’t over-mix the batter. Over-mixing can create a denser texture. For light, airy pancakes, mix the batter only until just combined.
  • Grease and preheat the pan. Grease the pan with a little bit of oil or butter, then let it heat over medium heat before you add in the batter. This creates the perfect golden-brown color and allows the edges to get nice and crispy.

Tips and Notes

  • Don’t swap the flours. Different gluten-free flours absorb moisture differently. For that reason, I definitely don’t recommend using other gluten-free flours in place of the almond and tapioca in this recipe.
  • Use fresh baking powder. This is especially important if you’re planning on storing the mix for a while. If the baking powder is expired, then it won’t serve its intended purpose—to make the pancakes nice and fluffy!
  • Mix well. You want to make sure that the dry ingredients are all fully mixed up and well distributed for the perfect pancake batter.

How to Store Homemade Pancake Mix

Store your homemade pancake/waffle mix in an airtight container or mason jar in the pantry for up to 2 weeks or in the refrigerator for up to 1 month!

Can You Freeze Gluten Free Pancakes?

Yes! We love to keep pancakes in our freezer for easy breakfasts anytime!

To freeze your pancakes:

  1. Let them cool completely to room temperature, then flash freeze on a parchment-lined baking sheet until solid.
  2. Transfer to a ziplock bag or freezer-safe container, then store in the freezer for 1-2 months.
  3. To warm, heat the pancakes in the toaster or in the microwave until heated through.

Ingredients
  

Single Batch:

  • 1/2 cup blanched almond flour
  • 1/2 cup tapioca flour
  • 1 teaspoon baking powder
  • Pinch of fine sea salt
  • Makes: 1 cup of mix 2 waffles (eight individual pieces total or 8 3- to 4-inch pancakes
  • Labels have instructions on how to make the waffles/pancakes

Double Batch:

  • 1 cup blanched almond flour
  • 1 cup tapioca flour
  • 1 1/2 teaspoon baking powder
  • Pinch of fine sea salt
  • Makes: 1 cup of mix 4 waffles (sixteen individual pieces total or about fourteen to sixteen 3- to 4-inch pancakes
  • Labels have instructions on how to make the waffles/pancakes

Large Batch

  • 4 cups almond flour
  • 4 cups tapioca flour
  • 2 tablespoons baking powder
  • Pinch fine sea salt

Instructions

  • In a large bowl or a large mason jar, mix together almond flour, tapioca flour, baking powder, and sea salt.
  • Store in an airtight container in the pantry for 2 weeks, or in the fridge for up to one month.
