This Sheet Pan Grilled Cheese is everyone’s favorite classic made easier in the oven! This recipe is designed for bulk cooking and creates the best grilled cheese sandwiches in just a few minutes. They’re buttery, cheesy, and perfectly golden-brown.
Easy Oven Grilled Cheese
I didn’t know making a grilled cheese sandwich could be easier with little to no clean up…until I made this Sheet Pan Grilled Cheese recipe.
Plus, this recipe is perfect for cooking for a crowd or just making a couple of sandwiches.
Just assemble your sandwiches, line them on any baking sheet, and bake. The result is ooey gooey, cheesy perfection and, arguably, the best grilled cheese you’ll ever have.

How Do You Make Grilled Cheese in Bulk?
You bake it in the oven! If you’re cooking in bulk, you’re kind of out of luck when it comes to making grilled cheese on the stove.
The key is oven grilled cheese! You can cook as many as you can fit on your baking sheet all at one time.
Ingredients Needed for Sheet Pan Grilled Cheese

- Bread: I use gluten-free sandwich bread, but feel free to use whatever type of bread you like.
- Cheese: I use a combination of cheddar, colby jack, and mozzarella for the creamiest, cheesiest texture and the perfect flavor. Any will do, or just one!
- Butter: A slather of butter on the outside of each slice of bread is the key to that golden, crispy texture. Tip: I recommend softening the butter a little bit first so it’s easy to spread.
What is the Best Bread for Grilled Cheese
This one is totally up to you! I use a gluten-free sandwich bread for a more classic grilled cheese, but you can use a regular sandwich bread, brioche, rye, sourdough, you name it.
Keep in mind that different types of bread will cook at different rates.
What is the Best Cheese for Grilled Cheese?
I like to use a combination to really round out the flavors of the grilled cheese! For this recipe, I use a mix of cheddar, colby jack, and mozzarella. It’s so creamy and cheesy and delicious!
If you want to play around with flavors, feel free to use any melty cheese you like until you find a combination that works best for you! Think provolone, swiss, etc.
What Can I Put in a Grilled Cheese?
Aside from the cheese, there are tons of ways you can customize and bulk up your grilled cheese sandwich! Here are just a few add-in ideas:
- Shredded chicken or turkey
- Ham or deli meat
- Roasted Peppers
- Freshly sliced red onion
- Caramelized Onions
How to Make Sheet Pan Grilled Cheese
This sheet pan grilled cheese recipe is seriously the easiest way to make a ton of grilled cheese at once! Here’s a breakdown of the recipe:
- Prep the bread: Spread the softened butter on each side of the sliced bread.
- Assemble:Lay bread out in a single layer on a baking sheet, top with cheese, then close the sandwich with another slice of bread. Then butter the top piece of bread.
- Bake: Bake the sandwiches for a few minutes, flip them over, then bake for another couple of minutes or until both sides are golden-brown and the cheese is melty.
What Temperature Do You Toast a Sandwich in the Oven?
I recommend cooking your grilled cheese sandwiches at 400ºF. It’s high enough that the bread gets nice and toasty, but not so high that it burns before the cheese is melted.
Tips and Notes for Sheet Pan Grilled Cheese
- Butter both sides of the bread. The butter adds flavor, but it also helps the bread get that beautiful golden-brown color and crispy texture as it cooks. Don’t skip it!
- Softened the butter. I recommend softening the butter a little bit first so it’s easy to spread.
- Leave space between the sandwiches. We want to leave room for the heat to reach the bread and the cheese so you get the perfect texture all around the sandwich.
- Cook on the bottom rack. I recommend keeping your sandwiches on the bottom rack so they have time to cook all the way through without burning and get that nice golden brown crisp.
- Check often. Every oven is different, so keep an eye on your sandwiches so you don’t accidentally burn them.
- Addition: Add mayo. If you want, you can spread a thin layer of mayonnaise on the outside of the sandwich. I don’t find it necessary, but some think it adds more buttery flavor and also acts as a barrier so the bread is less likely to burn.

How to Store
Grilled cheese sandwiches are best served right away. However, any leftovers will last in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months.
When you’re ready to serve again, thaw in the fridge if frozen, then warm on the stove or back in the oven.

Sheet Pan Grilled Cheese
- 8 slices bread, of choice
- 16 slices cheese, of choice
- salted butter, softened, as needed
- Preheat. Preheat oven to 400ºF.
- Prep the bread: Spread the softened butter on one side (outside/top) of the sliced bread.
- Assemble: Lay bread out in a single layer on a baking sheet, with buttered side down. Top with cheese, then close the sandwich with another slice of bread. Then butter the top of the second slice of bread.
- Bake: Bake the sandwiches for 4 minutes, flip them over, then bake for another 2-4 minutes or until both sides are golden-brown and the cheese is melty!
