These Buffalo Chicken Burgers are the best chicken burgers! They’re made with perfectly seasoned ground chicken burger patties and then baked. These ground chicken burgers are gluten-free, paleo-friendly, and low-carb!

Serve these on buns or in lettuce wraps topped with tomato, avocado, lettuce, and some scallions!

Easy Ground Chicken Burgers

I can’t get enough of all things buffalo! You can find others, like buffalo cauliflower bites, buffalo chicken stuffed sweet potatoes, buffalo chili, buffalo chicken tenders, buffalo baked hummus, buffalo chicken taquitos… and the list goes on!

These have got that classic, spicy buffalo flavor packed into a ground chicken burger. They’re so easy to prep, super nutritious (especially served topped with tomato, avocado, and lettuce), and perfect for an easy meal prep option.

Freezer Friendly Burgers!

You can even make a double or triple batch and store them in the freezer!

You can cook them from frozen, too! Place frozen burger on the grill and cook for approximately 15 minutes, turning the burger halfway.

Ingredients Needed

  • Ground Chicken: You’ll need 1 pound of chicken to make 4 burger patties.
  • Aromatics: We’re starting with a blend of onion, scallions, and carrots to create a flavor base for the burgers (and sneak in some veggies!)
  • Egg: The egg helps bind everything together so the burgers can hold their shape.
  • Hot Sauce: I like Frank’s RedHot Wings sauce, but feel free to use your favorite.
  • Spices: A blend of garlic powder, sea salt, black pepper, and red pepper flakes adds just the right flavor to the burgers.

How to Make Buffalo Chicken Burgers

These tasty buffalo burgers are so quick and easy to make! Just a few simple steps, and they’re going straight into the oven.

  1. Prep the aromatics: Combine the carrots, onions, and scallions in a food processor. Pulse into small bits.
  2. Make the burger patties: In a large bowl, combine the vegetable mixture with the ground chicken, egg, garlic powder, salt, black pepper, and red pepper flakes. Mix until combined, but don’t over-mix. Form into 4 patties.
  3. Cook and serve: Line the patties on a baking sheet and bake at 350ºF for 20 minutes, flipping halfway through.

How Do You Keep Chicken Burgers From Falling Apart?

The key to a burger that holds its shape is the egg! It adds moisture and helps bind everything together for the perfect texture. Without it, your burgers would be dry and crumbly!

To keep your burger patties nice and moist, be sure to take them out of the oven as soon as they’re baked through. Overbaking can zap out the moisture necessary for the perfect texture!

  • Don’t over-mix the meat. Over-mixing meat can cause it to become tough and dry. For the best texture, mix only until just combined!
  • Flip the burgers halfway through. After 10 minutes of baking, make sure you flip the burgers over so they cook evenly and on both sides.
  • Check the temp. To make sure the chicken is at a safe temperature, I recommend checking the temperature with a meat thermometer. It should be 165ºF.

How to Store

You can store your buffalo burgers before or after cooking! Here’s how:

Before cooking:

  1. Mix the meat, egg, and seasonings, then form into burger patties.
  2. Place the patties onto a baking sheet and flash freeze until hardened.
  3. Once they’re solid, transfer them to a freezer-safe bag and store them in the freezer for 3-4 months.
  4. When you’re ready to serve them, let them thaw overnight in the fridge, then bake as directed. Or You can cook them from frozen, too! Place frozen burger on the grill and cook for approximately 15 minutes, turning the burger halfway.

After cooking:

  1. Let the baked chicken burgers cool completely.
  2. To refrigerate, simply store them in an airtight container in the fridge for 3-4 days. To freeze, flash freeze the cooked and cooled burgers on a baking sheet until hardened, then transfer to a freezer-safe bag and store in the freezer for 2-3 months.
  3. To enjoy again, thaw overnight in the fridge if frozen, then warm in the oven until heated through.

Ingredients
  

  • 1/2 onion chopped
  • 1/3 cup scallions chopped
  • 2 carrots peeled and chopped
  • 1 pound ground chicken
  • 1 egg
  • 1/4 cup hot sauce I like Frank’s
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  • Preheat oven to 350°F.
  • In a food processor food processor combine carrots, onion and scallion; pulse to chop into small bits.
  • In a large bowl combine the vegetable mixture, ground chicken, egg, garlic powder, hot sauce, and salt and peppers.

  • Turn on broiler to high and broil for 2 minutes.
